One Cup Chicken & Dumplings

This is the time of year when I feel like I can finally start to take a breath! Harvest is over, pumpkin and produce season is done, and I can finally start to cook meals regularly again!

Once it gets cold I love to start cooking all the soups and stews and all the best cold weather comfort food. Chicken and dumplings is THE comfort food but I don’t always have time to mess with cooking a whole chicken. So when I saw variations of this recipe it quickly became a favorite.

Its just like a classic one cup cobbler recipe (one cup of milk, cup of sugar, cup of flour) but the chicken and dumplings version! Super easy and comes together quick because you use a store bought rotisserie chicken.

One Cup Chicken & Dumplings

Ingredients:

  • pulled chicken from a rotisserie chicken (don’t use the skin)

  • 1 stick of unsalted butter (melted)

  • 1 cup self rising flour

  • 2 cups chicken broth

  • 1 can cream of chicken soup

  • 1 cup milk

(I don’t salt and pepper the chicken because the store bought chicken is pretty well seasoned. But if you aren’t using one I’d add a pinch of each!)

Preheat oven to 375. Spread chicken in the bottom of your 9 x 13 baking dish. Pour the melted butter on top of chicken. In a bowl, whisk together milk and self rising flour (SELF RISING, not regular). Pour this over your chicken (DON’T STIR!). In your same bowl, whisk chicken broth and cream of chicken. Again, pour on top but DON’T STIR!). Bake for 45 minutes and then let sit for a few minutes to let the dumplings form up a little more.
